Din Tai Fung Style Pork Chop (Air Fryer)

The original recipe I first come across is from an instagrammer Magaret.athome. it was only after my first trial that i did a google, revealed that blogger ieatishootipost use the (very much) same ingredients to make the same Din Tai Fung pork chop.


I have an issue with the recipe from the Magaret.athome as it was unclear if the corn flour is use to coat the pork chop before frying or to add into the marinate to marinate the pork chop together. 
However blogger ieatishootipost add potato starch (instead of corn flour) into the marinate and another blogger cjeats coat the pork chop before deep frying (ieatishootipost also deepfry, not air fry).

My first trial, i did the coating with the corn flour. I also cooked the remaining marinate into a sauce.

Trial 16th May 2026

pork chop - forget measure weight. I use loin.
Only use back of chef knife to pound pork chop to break fibers but it doesn't flatten the pork chop to a bigger size.
Family approve this pork chop so can tweak to make it suitable to family taste.

brine
180ml water
2 tsp salt
1 tsp baking soda
Soak for 30 minutes

marinate ingredients 
1 tbsp light soy sauce
1 tbsp sugar
1 tbsp chinese cooking wine
1 tbsp sesame oil
1 tsp black pepper
1 tsp garlic powder
1 tsp five spice powder
marinate for 45 minutes (ieatishootipost recommend marinate overnight)

then i use unknown amount of corn flour to coat before placing it into air fryer to air fry. The corn flour will kind of soak up the marinate and for those area that I coated with more corn flour,  it doesn't really soak up and those area would still have dry flour after air frying.

Lesson learn - corn flour (maybe) should be mixed into the marinate because dry flour would not cook in air fryer unlike in deep frying. However blogger cjeats coat the pork chop with potato starch instead of mixing into marinate. Both cjeats and ieatishootipost use deep frying method. 

If use deep frying, 1.5minutes to 2 minutes frying  will do.

Also this recipe has too much 5 spice powder to the family liking. 

In next trial, to omit 5 spice powder and to try mix corn flour into marinate before air frying instead of coating the pork chop.













My pork chop


Original recipe (ingredients in this red colour is from ieatishootipost) :

Ingredients
2 pork chop                                 Pork Loin 600g  slice to 16mm thick
2 cups water                                500ml water
2 tsp salt                                      Salt 25g  (5% brine)
1tsp baking soda                         Baking soda 2 tsp (10g)

Marinade
1 tbsp light soy sauce                 1 tbsp kikoman shoyu
1 tbsp sugar                                1 tbsp sugar
1 tbsp chinese cooking wine      2 tbsp chinese wine
1 tbsp sesame oil                        1 tbsp sesame oil
1 tsp black pepper                       1 tsp black pepper powder
1 tsp garlic powder                     2 tsp garlic powder
1 tsp five spice powder               1 tsp five spice powder
2 tbsp corn flour                          2 tbsp corn flour

Method
1. Use the back of your knife to gently pound the pork chops. This helps to break down the fibers and gives that signature tender bite.
2. Mix water, salt and baking soda. Soak the pork chops for 30mins to 1 hour.
3. Remove the pork from the brine (do not rinse). Add all marinade ingredients and coat evenly.
4. Let it rest for another 30 minutes to 1 hour.
5. Air fry at 175dc for 14minutes or until the internal temperature reaches 65dc.
6. And you are done, enjoy!
